Eggless Brownies

I wanted to make an egg-free or eggless cake and ended up going for everyone’s favourite… brownies 🙂

Here’s the recipe for a brownie that fits in a standard rectangular pyrex dish.

  • 400 g of chocolate
  • 220 g of butter
  • 200 g of flour
  • 200 of sugar
  • 1 teaspoon of bicarbonate
  • 2 pinches of fleur de sel or regular salt
  • 1 orange
  • 200 ml of milk
  • Optional: 200 g of walnuts, almonds, pistachios or other types of nuts.

Preheat the oven at 180°C.

Grind the nuts roughly or mix them in your mixer for a few seconds.

Use a microwave safe bowl: break the chocolate into pieces and add the butter in small cubes. You little one will love helping you break the chocolate!

Melt the chocolate and butter mix in the microwave. Put the mix 30 seconds at a time and mix each time thoroughly until your get a perfectly melted mixture. Your little helper can be in charge of mixing.

Add the salt to the chocolate and then start adding the sugar spoon by spoon to the chocolate mixture, mixing thoroughly after each spoon.

Add the bicarbonate to the flour and then start incorporating the flour slowly to your chocolate and sugar mixture. Mix thoroughly at each step.

Add the milk and the juice of 1 orange to the mixture to make it looser.

Add 100 g of nuts and mix.

Grease and flour your dish or line it with aluminum foil, with some extra foil hanging around the edges so that it is easy to lift the brownie.

Add the mixture to the dish and sprinkle the rest of the nuts on top of your brownie.

Put your dish in the oven for 30 minutes or until a knife comes out clean.

Remove the dish from the oven and leave it on a cooling rack for 15 minutes. After 15 minutes carefully lift the foil and let the brownies cool completely before you can cut it. If you don’t use the aluminum foil the cooling time will be much longer.

Cut into squares and enjoy!!
