Sunday Cupcake Baking

After having tested many cupcake recipes (I have always been a big fan of these little miracles but I was never quite convinced by what came out of the oven), I came across this incredibly tasty recipe! So we decided to enjoy a bit of family baking time and put our aprons on!

 

For the cake:

What you need:

  • ½ lemon
  • 5g butter
  • 5g sugar
  • 75g flour
  • 2 eggs
  • ½ pack of baking powder

How to proceed:

Preheat oven at 180 degrees

  1. Melt the butter in the microwave and let it cool down
  2. Separate the egg white from the egg yolk
  3. Mix the egg yolk with the sugar and the pressed lemon until the mixture whitens
  4. Incorporate the melted butter, the flour and the baking powder and mix
  5. Add delicately the egg white to the mixture

Put the dough in the cupcake holders and bake for 25 min. Let it cool down a bit before icing.

For the icing:

What you need :

  • 50g of soft butter
  • 1 teaspoon of milk (optional)
  • 150g of icing sugar
  • 1 teaspoon of vanilla extract
  • ½ lemon
  • food colorant (yellow)

How to proceed:

  1. Whisk the butter to cream
  2. Once the butter is soft, add the sugar and vanilla gradually. Work the dough for 5 minutes, until you obtain a foamy cream. If the mix is too dense, add 1 teaspoon of milk. If it’s too liquid, add the icing sugar
  3. You can now add the colorant
  4. Ice your cupcakes with an icing bag or a spatula

The kids had so much fun putting the icing on the cake.

Friendly advice: try to get the icing on the cupcake before the kids eat it all out 😉

If you prefer a sweet chocolate taste for the icing, replace the lemon by 50g of chocolate.
